At the end of the hallway, the spicy, numbing, coronavirus-shaped bite would be served, followed by an absinthe cocktail, meant to represent medicine. Then, guests would board an elevator and be taken up three floors to the dining room that Achatz described as a “sunny, vibrant, happy and energetic” reprieve. When the meal concludes, patrons exit a different way than how they arrived.
