According to Collins, store director Rick Rodemacher at the grocer’s Manchester, Mo., location, was looking for a way to utilize an empty salad bar and got crafty. He tried a few things that didn’t work out, then got into the spirit of making the salad bar a real bar. The idea spread to other stores, which put their own spin on things.
