As Kokonas pointed out in an email sent to employees, and then shared on Twitter, this retooling of Alinea was done to help as many of the restaurant’s furloughed workers as possible. He hopes to “sell as many simple meals for curbside pickup as possible,” so that he can “bring as many of you back to work as is possible, rotating through to give you each work if you choose.” He also wrote that “everyone will be paid the same — there are no managers, head chefs, porters, runners… we are all identical in our pay. Ownership will take no salary.”
