The Tyger, From the Chinese Tuxedo Team, Opens

Headliner

The Tyger

Eddy Buckingham and his partner in Chinese Tuxedo, Jeff Lam, have headed, in dramatic fashion, to Southeast Asia with their new restaurant. The full black, orange, brown and yellow-splashed interior will not be revealed for a couple of weeks, but some of the furniture is being moved to the sidewalk for dining. On Sept. 30, the partners plan to open for indoor dining, restricted to 25 percent capacity (18 seats, with all-day dining available on weekends starting Oct. 17). The chef, Paul Donnelly, who is from Glasgow, Scotland, worked throughout Southeast Asia and is an owner. His menu makes ample use of ingredients like lemongrass, fried shallots, turmeric, curry leaves, banana blossoms, shrimp paste and green papaya. Dishes include stir-fried water spinach, oysters, fried chicken, fried rice, barbecue red shrimp and crispy lamb ribs. Mr. Buckingham named the restaurant for a William Blake poem, a favorite of his. Opening

Claudy’s Kitchen

Before there was this Peruvian restaurant, which opened at the beginning of summer, there were Claudia Berroa’s flans. A native of Peru, she started making and selling the dessert, to much acclaim, in 2014. They’re still being sold in several markets and at this Bronx restaurant, which she and her husband, Rich Berroa, own, and where she is the chef. It’s a storefront offering empanadas with fillings like chicken, lomo saltado and green vegetables. The flans come in several flavors, including passion fruit, coffee and, for fall, pumpkin. Many of the Peruvian classics like papa a la huancaína, chaufa (fried rice) and yuca fries are listed as sides, but they’re worth sampling. The restaurant offers takeout and delivery. There’s seating in the park nearby, and Mr. Berroa plans to open for indoor dining on Sept. 30, accommodating 14 diners.

Le Bernardin

The top-rated seafood palace, closed since the start of the pandemic, will reopen with indoor seating on Sept. 30. When Gov. Andrew M. Cuomo announced last week that indoor seating would be allowed to resume at 25 percent capacity in New York City, Eric Ripert, the chef and partner, was not sure whether it would work for the restaurant, or make economic sense. But he decided to go ahead. There will be 60 seats and a somewhat smaller menu for dinner only, Tuesday through Saturday, 5:30 to 9 p.m. Reservations are accepted.

Chefs on the Move

April Bloomfield

The Mayflower Inn and Spa, the luxurious Auberge Resorts Collection property in Washington, Conn., started a guest chef series in July. Until early this month, the chef was Victoria Blamey. She is being succeeded by April Bloomfield, who will run the kitchen and oversee the menus for the inn’s Tap Room and the redecorated main dining room, the Garden Room, through the holiday season. Among the highlights on the Garden Room menu are beef tartare, slow-roasted celeriac, grilled cabbage with mushrooms, and grilled heritage pork loin. Ms. Bloomfield has experience with working at a country inn; she is an owner of Coombeshead Farm, a guesthouse and restaurant in Cornwall, England. The Tap Room serves fare like soft country pâté, cauliflower tikka masala, fried flounder sandwich and sticky toffee pudding. (On both restaurants’ menus, the desserts are called puddings, in the English style.) Ms. Bloomfield is gradually stepping back into restaurant kitchens after sexual harassment allegations against her former business partner, Ken Friedman. She was a guest chef last February for a series of dinners to celebrate the 10th anniversary of The Breslin, where she was the executive chef, and is still mentoring the staff.

The Classics Remix

Next month, in a series created by Resy in partnership with American Express, a number of historic restaurants nationwide will have prominent guest chefs creating take-away packages, part of an attempt to ramp up business. From Oct. 16 to 18, at Second Avenue Deli in New York, Tom Colicchio will create a menu that includes hot pastrami salmon and a sweet potato knish. That weekend, Michael Solomonov in Philadelphia (at Pat’s King of Steaks) and Edouardo Jordan in Seattle (at Dick’s Drive-In) will also participate, and, in Washington, Kwame Onwuachi will be at Ben’s Chili Bowl. The program will run from Oct. 15 to 17 at a Chicago restaurant, and chefs will participate in Los Angeles, Atlanta and Nashville from Oct. 23 to 25. Ticket sales will start on Sept. 22 at 10 a.m. for American Express Card members, and on Sept. 24 at 10 a.m. for others. The ticket is the price of the food package, ranging from $17.50 to $60, depending on the city.
