Custom mac and cheese! South Bay restaurants launch concept amid COVID-19

Custom mac and cheese! South Bay restaurants launch concept
amid COVID-19 1

We’ll have the Four Cheese Mac with brie, mushrooms, caramelized onions and fried chicken, please.

Back in April, South Bay restaurant group Vine Hospitality, which owns San Jose restaurant Meso on Santana Row and Left Bank Brasserie in Menlo Park, launched Mac’ N Cheese Shop, a virtual eatery specializing in house favorites and custom macaroni and cheese dishes. Heck yeah.

According to a spokesperson for the restaurant group, the concept — eight house macaroni and cheese dishes, a build-your-own mac menu and a selection of mini proteins — was in the works before the pandemic. But, as interest in affordable comfort food began to grow following March shelter-in-place orders, the virtual eatery was expedited.

Among the house favorites, there’s the classic five-cheese Cheesin’ ($11), New Brocklin’ with broccoli and cheddar ($13), Fried Chicken and Gravy (chicken strips and peppercorn gravy; $17) and Jalapeño Mac with bacon, jalapeño, cilantro and sour cream ($15).

You can customize by starting with the Four Cheese base and selecting from penne or macaroni, adding more from another five cheese options, including feta or brie, then completing your creation with add-ins, like caramelized onions, seared Spam or shrimp for an extra $1.50-$2.50 each.

Things get crazy — and potentially pricey — if you choose to add one of the six mini entrees, like Cajun Salmon ($11) or a 6-ounce Bistro Steak ($12).
